Picked up some gulf shrimp and a prime ribeye for Sunday dinner. The steak and everything else was spot on but I’ll have to say the brined chicken breast turned out eggcellent. Texture and juiciness was hard to beat and I think the brine really helped prevent drying out during a high(er) heat cook at around 450-500.

Darian, I tend to agree with good steaks, as I usually only do S & P. But the one exception is this style of "charcoal" seasoning out of Montgomery. I grew up eating steaks with this kind of seasoning and it just takes me back....it's not overpowering like a blackening can be, and it really can help form a nice dark crust.
