Marinated Legs and Wings in Walkerswood 5 hours. Smoked at 250-275 for 2 hrs using Pimentowood using half stone on the Woo.
At 165 internal raised the temp to 400 and moved the chicken to the direct side flipping 3 minutes each side until done. Skin was bite through and the meat not overdone.
