Fried chicken, but not fried chicken on the egg

It seems to be the thing to try so I tried it. Bought a pack of chicken and did the dredge with one egg and two cups of milk, then coated with equal parts yellow corn meal, flour and then seasoning. My go to is Myron Mixon's basic chicken rub. After coating I let the chicken sit in the fridge for two hours .Got the egg to 400 raised indirect until the IT was good. Chicken was phenomenal. Juicy, crispy and delicious. I'm definitely doing this again.

That looks great. About how long did they have to cook , and did u get to the minimum IT of 165 or did u go higher for a crisp skin?

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

We don't deep fry very much, but "fried" chicken on the egg does scratch that itch for fried chicken#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.
