Smoked chops, in the oven? You betcha!
We resurrected an old favorite this weekend. About 30 years ago my late father gifted me a Luhr Jensen Little Chief smoker. It was a great complement to my Weber kettle. We wore it out smoking everything known to man for 25 years. When it died I replaced it with a Masterbuilt, which failed in a year and prompted my BGE purchase. We’ve been missing the one strong suit of the Little Chief, which is cold smoking.
I just picked up a new one this week, and this weekend we did cold smoked loin chops. I buy whole loins at Costco and break them down to chops and roasts. We like to brine some chops, cold smoke over alder for an hour, then pull off to wrap and refrigerate for later. Bride of Teefus coats them in mayo followed by a dredge in Jiffy mix and bakes them in the convection oven.
Sorry, no pics. You already know what loin chops look like. Take it from me, they taste awesome.
