Help with Shun Knife for Brisket Trimming

I just received a 7” flexible fillet knife as a gift (https://shun.kaiusaltd.com/knives/knife/classic-flexible-fillet-knife) . It looks awesome and I like the flex that it has. I’m now considering the Shun Premier Boning Knife (https://shun.kaiusaltd.com/knives/knife/premier-boning-fillet-knife) because the curve might make trimming briskets and pork butts easier.
The Boning knife looks-wise is nicer in my opinion, but I simply want the knife that’s going to make trimming the easiest.
Should I exchange for the Boning knife or is the Fillet a keeper?

the boning one is more usefull if you are not filleting, its also easier to sharpen a rigid knife. theres longer stiff fillet knives out there, not sure i would go high end for what you are trimming but the 6 inch shun will still work
fukahwee maineyou can lead a fish to water but you can not make him drink it -
Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

@SmokeyPitt is that the boning knife he's using? Bad eyes over here!Milton, GA

I prefer a large butchers knife or a scimitar for trimming brisket. You'll be all day with a boning knife

I think so. My eyes aren't great either but it looks like it might be the shun.GoooDawgs said:@SmokeyPitt is that the boning knife he's using? Bad eyes over here!
In this video he talks about the boning knife he uses in the restaurant. It looks like a Dexter-RusselWhich came first the chicken or the egg? I egged the chicken and then I ate his leg. -
I use the Shun Classic 8-inch carving knife for trimming. It works great.Large Egg, PGS A40 gasser.

I have the Shun Classic 6" boning knife and use it all the time. Great knife, but I would use something larger for trimming briskets.Felton, Ca. 2-LBGE, 1-Small, PBC, PK360, Genesis Summit, Camp Chef Flattop, Smokefire 24, Traeger Pro Series 22 Pellet with a Smoke Daddy insert, Gateway 55 Gal. drum, SNS Kettle w/acc.

We're in the process of becoming a Shun dealer.....awesome knives.
Their "BBQ Pro Set" is 4.5" Asian Multi-Prep, 6" Boning Filet, and the 12" Hollow ground Brisket slicer.
I'm definitely getting a 8" Kiritsuke for myself though......I think I'd use that more than the little Multi Prep one.

I've got that 12" Hollow Brisket knife. It's pretty awesome - but I will say it can struggle a little with thick bark on a brisket. Sometimes I prefer my cheap Dexter serrated bread knife.Milton, GA

I have the Victorinox brisket knife now......not sure if I'll upgrade to the Shun on that. That boning/trimming knife is incredible those. I haven't used the Kiritsuki much, but it seems like it will fix everything I dislike about the Santuko type knives.

I played with a ton of them today and ended up with the Premier Boning Knife. Beautiful knife and looks like it'll fit my needs.Milton, GA

Depends on who got you the knife. If wife or kids got it for you, then keep it no questions asked.
I would rather light a candle than curse your darkness.
