So, what's a keto substitute for a hot dog bun? I really want to try this, and don't think a leaf of lettuce will do for a chili dog!___________

The Varsity is a just what doctor orders after a long night of drinking. I took some out of town business associates there, they didn’t enjoy. One didn’t finish before he was running to the hotel. Colon cleanse quick-like. Must take a lifetime of eating to get used to it. Been in my blood over 40 years. And will continue, however I prefer the Athens location. Never attempted to create it at home, I can’t do it justiceYou can’t get to Loganville, Ga from anywhere. You have to start somewhere else

RRP said:per request by @rekameohs
RRP here...I have faithfully followed this recipe until yesterday when I added gochujang at the equivalent rate of one teaspoon per pound of meat. That has been just enough added kicker and I loved it!

Here's the best I've found so far:
1 pound ground chuck
1 3/4 cups water
2 tablespoons chile powder
2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon granulated garlic
1 teaspoon granulated onion
2 teaspoons salt
1 dash tobasco sauce
Put water and all ingredients except meat into saucepan and stir well. Add meat, breaking it up with your fingers as you go. Bring to a boil, reduce heat to a simmer and leave uncovered until nearly all water is gone and the consistency is the way you like it. This is just about as good as the chili at the Varsity here in Atlanta. They make great chili dogs!
Regards,
Chuck Lane
RRP here again - I always stir the dry ingredients real well before adding to the water

Epilogue: my 3 pound endeavor from yesterday yielded sufficient chili for 64 hot dogs! And yes, all that floating grease was stirred back in! BTW I tried it today for lunch and it ROCKED!

I wonder if searing the meat first with the spices would elevate the flavor. Otherwise it seems like the meat and spices are kinda boiled.
