First Butt using woo

Well my first low and slow using the woo and 13" stone on my medium. First thing I noticed is it has about a 30* lower temp for sweet spot than with the platesetter. I held a consistent 240* thru a 9 hour cook...I'm sold.

Looks good. Did you slice, chop or pull it?

It was pulled and turned out awesome.

Man sliced sounds good. I’ve never tried that but have thought about it before.
