Labor Day brisket, and some more good eats

Labor Day weekend was our first holiday cookout with our kids since we relocated to Rockwall, TX from Tulsa.  It's nice to be close to our kids and grand kids on a holiday and not have to hurry to get in the car and drive home.  I haven't had a chance to design and setup my new outside cook area, so my Large Egg is back in its nest, which works just fine.  I started on Sunday night by prepping a 11 lb brisket and throwing it on the Egg with some chunks of Apple wood, at 235 degrees.  Sixteen hours later the brisket was pulled at 195 degrees and into the ice chest to rest.  I imediately through on some drum sticks and raised the Egg temp to 300.  After an hour I added some jalapeño poppers to the mix.  Served it all up with some beans, potatoes, Parker house rolls and a spinach salad.  And some cake and ice cream to finish the meal.
