did some paper chicken as well but somehow missed the pics, then did a beef and pepper stirfry that i dont remember at all =)

    It it all sounds good.  How did your paper wrapped chicken turn out?  I can’t remember the last time I had that.

    followed this one, will probably change the marinade up next time. went overnight with the marinade

    really came out tender, used boneless thighs.  havent even seen paper chicken since maybe the early 80's

    cubed thighs about 3/4 inch
    marinade over night with
    2 tblsp hoisin
    1.5 tblsp dry sherry
    1 tblsp veg oil
    1tblsp cornstarch
    teaspoon sugar
    ice cube size of ginger minced
    some dry minced garlic
    1/4 teaspoon 5 spice

    wrap in foil in small batches, fry a couple minutes in peanut oil, flip and another couple minutes. google says you can use parchment instead of foil, foil just looked easier and may help in some type of flash steaming, extremely tender

    That's like sous vide on roids !  Might try it some time.

    I assume you deep  fried the packets in a wok?

    had to use a small dutch chicken fryer pot, no wok at camp right now. outside weber would only go to 350 oil temp, was shooting for 375 but close enough. might be a good technique for wings =)
