Did a reverse seat jerk pork tenderloin tonight for dinner.
Spices on and ready to grill.

Pimento wood chips for a more authentic flavor...

Indirect at the felt line.

Getting a a good sear.

Plated with homemade Caribbean hot pepper sauce, coconut brown rice, and black beans.

Thanks to this forum, I made both the Caribbean hot pepper sauce and some sriracha today.

Good day overall.

Nice work. I've got two tenderloins in the freezer that I need to cook. This looks like a good approach.Marshall in Beautiful Fruit Cove, FL.

Great cook across the board. Plated pic for the win. Nice work with the homemade sauce and sriracha as well.

I can really tell a difference when I use pimento wood. It tastes more like the jerk I have had in Jamaica and Grand Cayman. Just not the same with other smoking wood.NDG said:NICE COOK !! Everything looks great . . . curious if you think the Pimento Wood added something special ?Gil Gowing
