Spatchcock Chicken with Dizzy Pig Tsunami Spin

Set my egg up for direct using my AR with a grate at felt level. Rubbed the bird with the DP Tsunami and let it sit in the fridge while I took my son to swim lessons. Got the egg up to 350 and put it on skin up until it got a nice texture then flipped over and dropped the temp closer to 300 for the remainder of the cook. Total time was just under 1.5 hours, wife loved it but I got a late start and didn’t cook the sides I planned on doing.
