Planking

Picked up some nice King Salmon filets and decided to try planking. Honestly, I don’t see what the big deal is other than the planks keeping your fish from sticking but it does make for some awesome presentation. Having said that, fish was delicious. 

Salmon was seasoned with SP&G, then layered with butter, fresh dill, minced garlic, heirloom tomatoes and slices of lemon. Cooked at 400 for about 20 min or so til it reached 145. Here’s some before and after shots.

    Those look great. I find that the Egg imparts enough flavor that you don't really get any cedar flavor. However do those on a gasser and you will get a lot of plank flavor.

    We always plank our Salmon- to your point not sure if it adds anything taste wise.

    I have two different plank sizes- One or Two Filet size.  Makes it easier to season in house and put on egg, but we pull them off and plate.  We dont serve on the planks.

    Just Vote- What if you could choose "none of the above" on an election ballot? Millions of Americans do just that, in effect, by not voting.  The result in 2016: "Nobody" won more counties, more states, and more electoral votes than either candidate for president.

    nice presentation.  you need to get the cedar charring, closer to the fire for flavoring.   thats why grillsgt mentioned the gasser.  cedar planked mashed potatoes are a favorite here, they build up a cedary crust

    What??? That sounds really interesting. Now I'm thinking bourbon sweet potato mash on the plank.

    the trick is to really load them up, herbs, crema, bluecheese dressing, cheese, etc.   then chill them overnight before cooking, it helps hold them up while the crust sets

    Thanks for the commentary.  Do you discard your planks once their done?  These planks cost me $10.  Is there a cheaper alternative?

    go to home depot, untreated cedar shake/shingles work just fine. if you are going for presentation cook on the shingles and transfer to those boards

    I resuse them again and again.  I soak them for 15 min or so before I put the protien on them.  I always use them indirect but the bottom is a whole lot blacker than the top.
