Caribou Meatloaf

Saw the wild game thread earlier and thought I would share a post of one of my cooks. First attempt at making meatloaf on my own; usually crash mom's house when she makes for my dad.

Me and my gf in attempt at trying to eat healthier are going paleo....cheated with the ketchup, didnt have time to do homemade variety ,
Using caribou instead of beef, eggs straight from the chicken butt....courtesy of ethel and Lucille, and almond flour vs regular flour.

Here's the before...and I'll post pics in an hr when done

never tried caribou, is it like elk.

To me ..no.. I've found elk to be a little more gamey in taste with wonderful but unique flavor. 
I would tend to lump caribou as a juicier and more tender bisonish personally

Looks good! Man you must have found the holy grail of caribou. I’ve got some out in my freezer that would require a top shelf chef and a prayer to get to taste great.
