Burgers and brats instead of fast food.

My wife is out of town and I am always tempted to just grab fast food, but made some burgers and brats instead. Sauteed some Vidalia onions to go with it and had some frozen, mixed veggies as well.

    Nice meal.  Homemade is always better than fast. Plus lighting the egg is so much fun (in my opinion).

    saute onions and braise the brats in beer for a few hours then grill the brats to get them charred and back into the beer/onion bath to serve them.

    Holy cow! Took an hour to get the xl up to temp. My LBGE usually is much quicker. Enough wine now I may not eat. Need to remember to take the brats off. Sleepy time.

    What temp were you shooting for?  a fan or leaf blower can get it to high temps in little to no time.  The trick with the XL is to open it up and once you see it start moving, then start to slowly closing it up until you get where you want it.  Over time, you will know where to put the vents for a given temp and just set it.

    You need a better lighting technique.  Open all vents fully.  I start my XL with a electric starter for 8 minutes.  Then 6 minutes later with a close lid I hit 350º, 8 minutes 400º, 10 minutes, 600º+.
