Culture Clash Sunday - Ribs and Enchiladas

Had plans to cook a brisket on Saturday night/Sunday morning for a couple of friends of ours that live about an hour away.  I've been working 6 days a week for the past month and this was my first Saturday off.  The decision was made to cancel our plans on Thursday evening.  I just felt that I wouldn't have been able to put my full effort into that cook and therefore would have probably ended up with a sub-par end result.  So Sunday rolls around and I had to cook something though.  Pulled out a couple of racks of baby backs I had in the freezer and on they go.  Nothing special to see here.....Rub, Cherry Smoke, 250, bend, toothpick, etc etc etc.  End Result below.  Quite tasty and cooked just right IMHO.  The most satisfying part of the cook was getting my 7 year old son involved with it as well.  We went through all steps together.  From pulling the membrane to checking the fire to adding wood.

Now this is where they true delicousness begins.  I married into a Hispanic family.  Apart from marrying the love of my life, the biggest benefit/byproduct of this has been the wonderful food.  Her mom is the definition of old school.  Every single thing she makes is home made, labor intensive, and made with love.  We get the call around 2:30 that she has made chicken enchiladas and wanted us over for late lunch/early dinner.  Perfect.  I'll bring the ribs and sausage and she has enchiladas rice and beans.



Everything homemade.  Everything wonderful.  Egg with the rice was a new thing I found about after eating with them for the first time some 6 years ago.  Rice is made with the chicken broth from the chicken for the enchiladas.  Sauce for the enchiladas made from scratch as are the beans.  This was truly a top notch meal.  This woman puts her all into her food everytime she cooks.  Starts at 6:00 am.  She got mad because I couldn't eat more than 5 lol.  She made 5 of these trays..........

My son and my helper approves....My 14 year old daughter being a 14 year old daughter lol

    What a great day with family.  The food greatly enhanced the entire experience.  Congrats across the board.
