An almost soul food supper.

Probably needed some fried okra and maybe some cornbread to qualify as soul food, but it was good. Marinated the thighs in pickle juice then grilled with Penzey's and then glazed with Heinz Memphis BBQ Sauce, served with collards and black eyed peas, tomato and a piece of toast on the side. Good stuff. I did sprinkle the collards and peas liberally with hot sauce after the pic was taken. Served with iced tea of course. Mine was sweetened with splenda, which is not the same, but better than unsweetened iced tea any day.

    I'd say that's got some soul to it!  Nice.  Does the pickle juice make the yardbirds taste like pickles or does it just marinate and break down proteins and all that?

    No, you don't taste the pickle juice, it just makes the chicken extra tender and juicy.

    We've got a little Soul Food joint named "Dot's" right up the road from work that has some of the best Soul Food I've ever had. I've been trying to reverse engineer their recipes for years now. I've come to the conclusion that they marinate meats in pickle juice and add more than a pinch of MSG to everything.

    Love me some sliced damater this time of year.
    I am a simple southerner who always looks forward to the first fresh out of the garden tomato of the year. It is a simple pleasure. I usually slice the first one in a sandwich with lots of Duke's mayo and plenty of salt and pepper. A simple, satisfying sandwich that makes me happy. No store bought tomato ever comes close. This year's was a little late in that it was not vine ripe until the first week of July...but patience paid off and it was fantastic. Enjoying a bounty of tomatoes, cucumbers and squash right now.
