Banh Mi sammiches

My favorite restaurant (well, one of them) makes a charbroiled pork Banh Mi sandwich called Banh Mi Thit Nuong.  They serve it on a delicious French roll, that’s light and flaky.  I could seriously eat three in a sitting, but I’m usually there in uniform, so it’s best that I not push full capacity.  

I wanted to recreate the sandwich at home, and I can get close, but I’m never exactly right.  This attempt was my best shot yet. 

Marinated sliced pork pork tenderloin in shallots, garlic, sugar, salt, honey and fish sauce for an hour.  A longer marinade time would probably enhance it. 

Also, cut up daikon radish and carrots into matchstick sizes and rubbed them with salt and sugar for about 20 minutes. Rinsed, then bribed them in a solution of water, vinegar and sugar for a couple hours.

The bread I just can’t duplicate.  I bought bollilo rolls at WalMart based on Pinterest suggestions.  They just aren’t the same, but they are tasty. 

Mayo, cilantro, jalapeño, cucumber, pickled daikon and carrots, and the marinated pork.  I’m a sandwich fan in general, but this is my all time favorite sandwich.  Delicious.  I’ll take down three of these tonight.

    Those look excellent. I love a good Banh Mi sandwich. 

    How quickly does the pork cooked when sliced that thin?

    We're lucky, we have one of the best bread sources for banh mi.  They won a James Beard award.

    @UNCHeels08 I sliced the raw tenderloin as thin as I could with a chefs knife.  Pre-cook they were probably about 1/8” thick.  I cooked them direct at 400, and I’d say that they took somewhere between 5-6 min.  I kept probing with the Thermapen.   I pulled it when the thickest pieces probed at 150, which was probably a bit much.  The thinner pieces were dried out a bit.  

    I always forget that pork is good to go about 135-140. 

    Just made a leftover sandwich.  I put some hoisin sauce on the meat before reheating it.  That made all the difference.  

    It also made my microwave stink something awful.  Fish sauce smells so, so bad. But it tastes so, so good.

    That looks absolutely killer -- you totally nailed it.

    Bread is hugely important, so are the pickled veggies.  I love the pate they spread on it + thinly sliced jalapenos, some cilantro, and sriracha.  Need one NOW!!!

    Well, you need to get up early and do whatever it takes to get on a plane for banh mi.  Just don't climb in a wheel well, I have heard of bad travel results.
