Chops and Spoonbread

Stopped at Deep Cuts and pick up some pork chops.  Cooked on the egg cause AC working over time with temp at 108 degrees outside.  Forgot to take plated pics, sorry.

Thx.  Dry brine for 12 hours.  Cooked to 145IT. Reheated chop was just as moist as the original cook

I'm going to have to try out Deep Cuts.  I'm looking for a new local source for meat.

@TexasRebel,  you will not be disappointed.  Warning: If you get their fresh ground beef you will never go back grocery store repackaged.  
@EggObsessed, no you can't.  They had a standing rack of Berkshires that should have come home with us...miss opportunity...won't happen again.

you should NEVER put corn in spoon bread or corn bread for that matter and definitely not in pancakes - That is just plain wrong and deserves the most severe punishment available to man.
