Are you talking about Kansas City style where they are smothered in a glaze sauce? When I cook a brisket I just cube some of the point and dunk them in sauce and serve. Simple. I think what others do is cube it up cover in sauce in a foil pan and then go throw the pan back on the egg for a bit to create a kind of glaze by adding a bit of brown sugar. Not positive on timing.

Pretty simple and no real recipe: Separate and cube up the point into one inch squares. Place them in a pan back into the egg. Add a little rub or whatever you’re seasoning with, along with a good quality bbq sauce. Smoke til they’re sticky and tender without falling apart. Get some toothpicks to serve them with.

I’m cooking some now. Been a long time since I’ve done it. I’m using this as a basis.
