My quickest brisket yet

picked up a 10.7# prime packer from Costco yesterday to put on the egg overnight. Lit egg around 7pm and by 8pm, she was at 250 ready to go, so I threw the cow on. By the time I went to bed at 10, IT was already 165... I was hoping the stall would happen soon. I wake again at 1am and the cows at 185... hmm.. oh well, I pass out and hope for the best. I wake up again at 4 and IT is now up to 205... Welp, time to get up now... I get up, inspect the situation, pull the meat off, and FTC. I go back to sleep and awake at 7, cut a few slices off go check it out and it’s great. 

So, what was the possible cause for it cooking in almost half the time? FB300 held temp at 250 all night so I know it wasn’t a spike in temp that caused it.

  • I don't know why either, last one I cooked did the same thing. It took 4 hours less than I had calculated. Tasty though. Your's looks great.

    It tastes great... just sucks that I’ll have to reheat. I didn’t want to FTC until lunch time. I was banking on it being cooked around 10-11. Ah well.

    This happened to me on my first SRF Black brisket. Between my limited experience (3-4 prime cooks) and what I’ve read here, I now plan on about 45 mins per pound with any prime brisket cook. Looks good though!

    I’ve had that happen and I FTC’ed all day. It was one of my better briskets. Don’t sweat it. Even Franklin has to extended hold food. Could you imagine Aaron telling the hundreds in line that the “Cow Drives The Cook”?

    That looks a bit small for 10lbs. maybe the weight was off. only thing I can think of

    Ah, but the cow does drive the cook.  And you can only plan for the average cook behavior.  For every one on one end of the spectrum there is another on the other. 
    Regardless of how you got there-great result.  Congrats.
