Smoked pork chops and cherry pie
new butcher shop in town so we picked up a few things to try. These poke chops were seasoned with dizzy pig IPA and smoked over Apple to an IT of 130 and pulled until ready to finish.
Then they got a nice sear:
I made a BBQ sauce with some rhubarb and brushed some on at the end. Damn that was tasty. (Rhubarb cut into small pieces, simmered w water, sugar, then ketchup, a jalapeño, worstershire, salt, vinegar).
Dessert was whatever you’d call this. Rustic tart? Fresh Michigan tart cherries, a favorite of mine, worth the time pitting. Macerated in sugar, added salt, vanilla, Cointreau and vanilla. Crust is the wife’s, made with you-know-who’s leaf lard. Liquid motherflipping gold.

@Ima_good_egg my wife goes out of her way to find real lard, and leaf lard if she can. this is the stuff produced by our egghead brothers in the houston area so it's extra special!
@Killit_and_Grillit funny, that's exactly how i felt, sitting on the patio having a cold drink, smoking a pork chop. doesn't get any better.
