Cured Bone in Ham (Prosciutto) from Broadbent Hams

My brother-in-law visited Husk, in Charleston SC where he had a charcuterie plate that he thought was outstanding.  After speaking to the bar tender and the chef about the prosciutto he was he contacted Broadbent Hams and ordered a leg Dry Cured Ham.  Needless to say when the package arrived Friday after work I was not disappointed.  This might be the coolest gift and one of the best bits of prosciutto I have ever tasted.  The pictures do not do it justice!

    If you are interested in a country ham I recommend Finchville Farms http://www.finchvillefarms.com/

    The Broadbent prosciutto is hard to beat.

    That's awesome! Been wanting to try one of these... so how do you store it? Are you slicing paper-thin with that chef's knife? There's gotta be a better way. 

    Been trying to get a reservation at Husk Nashville but haven't had much luck.

  • I have it stored in my basement on a raised rack (turkey rack) next to a dehumidifier.  The company recommended hanging the meat in a stockinette so air can circulate around the leg. However, they said a raised rack with ample airflow would be just fine.  I am ordering some stockinettes to hang the meat once they arrive. 

    The knife pictured can get decently this slices but not paper thin like you would want. I ordered a "salmon slicer" knife that arrived yesterday, and it cuts paper thin slices.  I highly recommend ordering one of these, the quality is fantastic, and it is a really cool experience.  Next up is ordering a carving stand.

    I personally like their hams better and I can't actually tell you why except they seem to be ultra-consistent for salt content and texture. Don't get me wrong though, Broadbent hams are the standard.

    I love telling people about country ham and finish with saying “just keep an eye out for the skippers” “yeah skippers, if you see a little something moving you just skip that part.”

    Didn't know Broadbent had moved into prosciutto. When I last looked at their product, it was just really fine country ham. Will have to consider a purchase.

    That's not bad at all, especially if you split it between a few people. Totally worth it.

    Can you elaborate? Surely there ain't parasitic worms or whatever moving around in there.....

    Hahaha. Yeah people that hang their own hams may get a maggot or two in the hot part of the summer. It’s funny, growing up most everyone had a ham or two hanging in the basement, then for years people simply bought sliced cooked ham in the grocery store. It’s great to see people hanging hams again.

    If I see a maggot I'm done. I'd have to use one of them wine fridges or something to keep them creepy crawlers out.
