Cast iron grilled Rockfish

Mrs. 500 said she wanted a healthy dinner. She picked up 2# of Rockfish. Set the Egg up to burn at 375* direct. Added a handful of alder chips for smoke, and then dropped in my Goodwill find cast iron plate. After it warmed up, seared off the filet pieces. Seasoned them with EVOO, garlic, crushed red pepper, sea salt, and black pepper, and after taking by them off, drizzled some grilled lemon and basil. Pretty good. Seared on all sides. Took about 15 minutes cook time. 
I like my butt rubbed and my pork pulled.

    They are also called Strippers or Stripped Bass. They, the ones around here anyway, come from the Chesapeake Bay. It’s a firm but still flaky and sweet white fleshed fish. They can get big. We like the big filets the best. These four pieces were from the same one filet.

    That looks great! I don't think I've had rockfish since I was a kid growing up in Virginia. Good stuff as I recall. Must have been if I can remember liking it that long ago! I didn't even know you could buy it. I thought the only way to get any was to catch it yourself. Wasn't there a time when it was illegal to keep them, regardless of size?

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Don't know the size limit, but there is one, and there is a catch limit per day.

    This year the regulations in Virginia were 2 fish per person, all over 20" and only one >28".  Protecting the larger more productive breeders.  Pic is from last fall on the Chesapeake.  We threw back a bunch. 
    Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here.  Very Extremely Stable Genius.
