I had 2 probes in it both read constant with each other. Temps crawled up to 187-188 then then jumped 10 degrees in what seemed a very short time.
End of flat was a little dry but the point was amazing and seemed very large for the total weight of the brisket.

Looks like at least here in Texas Kroger has Choice Whole Packer Briskets for $1.67 a pound this week. I've been using them with really good results. Its hard to pass on that deal. But I may end up going to Costco for Prime. Either Way. as @lousubcap says, This Monday is Memorial Day and National Brisket Day so I will be cooking one this weekend.

Not by choice, but a buddy wants to smoke a packer Saturday. Should be a fun day by the pool, campfire, with the kiddos, hopping in the golf cart to cruise back to the WSM to check on things, sippin' on some good suds.
Looking more forward to the quesadillas with it Sunday on the Blackstone.

A solid plan with enchiladas. Mexican is the best thing for brisket, as it needs help.
