Mothers Day Dinner

For Mothers Day I purchased 1.5" pork loin chops. I brined them in an apple juice, brown sugar, kosher salt and pork rub mixture for 4 hours.  Smoked indirect at 250 for 90 minutes and served with potato's cooked in bacon and onion with cauliflower salad and Texas toast.
