Absolutely no correlation to soccer.  It's an old line from the Cosby show and it was stuck in my brain.  I'm sometimes eclectic

Tibia bones cut lengthwise from the butcher and simple salt and pepper with evoo.  I kept the temp at 300 and just smoke them until they're dark brown.  Scoop it out will a spoon and load it on a small slice of French bread.  Simple and so good
