Quick weeknight meal before practice. Took a flat iron steak and covered heavy with #dizzypigseasonings #fajitaish seasoning and let it sit on the counter while the #bge #biggreenegg got up to 500.  Cooked raised direct over #rockwoodcharcoal with a piece of leftover pecan wood. Went quick and pulled at 125. Sliced and into a shell with cheese, peppers, onions and #cholula. While it was resting made the kids quick quesadillas in a #lodge cast cast iron skillet.
