Question- did you par boil the spuds before putting them on? I tried a cook like this once and the chicken finished before the veggies and I haven't tried since. -

Are these bone in and what temp did you cook at/to? I've done thighs and drums indirect lately around 400 and I'm not getting the crispy skin it looks like you are.

For crispier skin there are a handful of things you can do. As for my cook, I did two things to specifically target the skin. 1) I cooked high in the dome. The radiant heat coming down does a lot for the skin. 2) after the first 10 mins or so, I added a small amount of butter to the top of the thighs. Works really well on Turkey skin at thanksgiving, so why not chicken, right?
A couple of the other things you can do are let your raw chicken air dry on a sheet pan in the fridge or use a little corn starch with your rub.XL & MM BGE, 36" Blackstone - Newport News, VA -
