    Two recipes:

First, I've made several shrimp skewer recipes, and loved all of them, but one really stands out above the others.  I made these for my family at a beach get-together in a rented house using a gas grill, and I think they're even better on my BGE, but I got rave reviews including, "I think this is the best shrimp I've ever had!"  It's a Steve Raichlen recipe: Gulf Coast Shrimp.  It's really good!

There's another one that's super simple, basically just Sriracha Shrimp, but it has a few more ingredients.  It's by Kim Youngblood (Vidalia1), 2010 Sunshine State Eggfest recipe collection:
    Fiery Asian Shrimp

    INGREDIENTS:

1 lb. large (16-20 count) Shrimp peeled & deveined
3 Tbls. hot Chili Sauce (Sriracha hot sauce preferred)
    3 Tbls. Olive Oil
    2 teaspoons Sesame Oil
    1/4 teaspoon Sea Salt
    2 teaspoons Sugar
    4-5 cloves Garlic finely chopped

    Garnish (Important!):
    3 Tbls. Green Onions chopped
    Lemon or Lime wedges

    Skewers

    DIRECTIONS:

Combine chili sauce, olive oil, sesame oil, sea salt, sugar and garlic in a large ziplock bag. Mix together well. Add shrimp and let marinate for 30 minutes to an hour (original recipe said up to 2 hours).

Skewer shrimp and grill on BGE direct at 500° or so for 2-3 minutes per side until shrimp are done. Do not overcook. (Recipe originally said 350-375° for the same amount of time, but there was no charring at all at around 400. I liked them better cooked shorter but hotter at 500 or more.)

DO NOT FORGET: Plate and sprinkle green onions over shrimp and squeeze lime or lemon juice on shrimp and serve. (Definitely do this: the lime flavor was really good in this dish, and I think it would have been less wonderful without it.)

    NOTES:

Marinating pineapple chunks also (with just Sriracha), and alternating them with shrimp on skewers, was really good.

Keep it simple.  Hot fire.  Olive oil, salt and pepper with a lemon squeeze finish.  Garlic in the mix precook is good.  Double skewer the the shrimp.  2 skwerers through each shrimp.  Simplifies turning and helps even cooking.   2 minutes then turn for 1-2 minutes.  Should be 1 minute after the turn if you have a good fire.
