Elk steaks

First run with elk. Picked up some elk backstrap steaks. One rubbed with carnivore black, and one rubbed with dizzy pig cowlick.

Whenever I cook elk I throw a strip or two of bacon on top. Helps keep them moist as they can dry out fast . But let’s see the money shot!!

No money shot unfortunately.
Ended up over cooked for my liking. Was still tasty but would enjoy it more rare than where it ended up finishing. After I pulled it and rested it was closer to medium.Brandon - Ohio

Holy MOLY those look good! I've only had elk once, and LOVED it, though it was stewed, and very well done. It had no seasonings other than salt and pepper but tasted like she'd spilled half a bottle of sage in it because of what the elk had been eating. Wonderful!
But I've always wondered what venison or even better, elk, would taste like medium rare -- bet it's spectacular! Great job -- That meat looks PERFECT! -
