Needed to cook off some wings, Boneless Skinless thighs, and some ribs that I had. Ribs and thighs were done in the Mini Max and the wings done in the Large. Wings were 325-350 indirect for 30-20 then indirect for 15, ribs were 250 for 5 hours and thighs done at 275 for close to an hour. This was my first cook on the Mini Max and, especially reading on this forum about how hard it is to keep low temps, had no issues keeping 250 +/- a few. Loving the max!!!
