Eye of Round for Sammies

Just a Saturday cook.  Found an eye of round roast that weighed in just under 5 pounds  Trimmed some hard fat off, but left as much of the nice soft fat as possible.  Salt and Pepper rather generously.  Reverse seared, up to 116, then let her rip to around 600ish and 60 seconds per side.  Final temp was 128.  Then sliced thin for hot roast beef sammies.  Only thing I forgot to get was horseradish.  Over all, super delicious.  I didn't get any action shots as sammies were made as soon as I sliced the meat.  Have a great week everyone!
