Smash burgers with bone marrow butter

    Wow those look good. Now I need to look up bone marrow butter. I suspect it is a very good thing.

    Any idea what temp you were cooking at? I had a smash burger fail over the weekend. My burgers were a bit thick but don't look all that different from yours and I had the outside of my burgers burnt to a crisp and my insides raw. With the lid open I had no way of controlling the temp. Any tips/suggestions are appreciated as yours look great!

    Nice idea, going to try this. I'm a big fan of using bone marrow ever since using it for reverse double seared rib eye steak.

    Both burgers were over a 1/2 lb each.  The bigger one was mine obviously.  I struggled with regular grilling burgers so I thought I'd try it this way.  I ran my temps around the 500 mark and kept my lid closed as much as possible.  Working with temps in the higher range and having the lid open is a recipe for losing arm hair...... Thus the use of welding gloves.  Burgers came out perfect medium to medium well with beautiful crunchy yummy crust.  I used vegetable oil in the pan.
