First Post & First Attempt at Egret's Ham for Easter
New Egghead here, have been only using it for about a month but Easter rolled in and wanted to take a crack at Egret's Ham recipe which seems pretty popular. Got my XL up to about 260 and stabilized and then tossed in some soaked Apple Chunks (Soaked only because I've tried dry and wanted to see if there was much different). Didn't notice much.
Unfortunately, I went to Costco and all I could find is Spiral sliced ham. Did the maple injection but did notice it leaking out between the cuts, but figured because it was going in the fridge it could possibly coat some of the deep depths of the spiral cuts. Ham was on at 10:30 and finished about 2:45 to an internal probe of 148.
I placed it in a foil container, #1 to keep some of the moisture close to the ham and #2 to allow me to make some ham gravy.
Kudo's to Egret's for the recipe, worked out great for the first time. Tasted delicious without being overly sweet like you find on a lot of the provided mixtures for glazes.
