If anyone has ever cooked these with success please let me know. They were very tough and I didn't like the taste at all. Lucky they only cost $7.65, no big loss, 2nd worst cook ever...Northern New Jersey

Been down that road and got the same outcome. Must be the turkey...

I wonder if turning them into a "leg" and flat a la Buffalo wings, then SV then smoking (or searing) would improve their texture.Near San Francisco in California

I cook them whenever I can get 'em.
Break them up. The tip portion for stock. The bottom portion for roasting. The center portion is sometimes call "turkey ribs." I slice away the really tough excess skin along the edges. I do them much like ribs. Well rubbed, lo-slo dome no higher than 275. At 190F IT, the meat is usually tender, tho' not falling of the bone. In fact, I usually save the too chewy remnants for stock.

Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -
