Cooking a 15.5 lb. boneless pork butt

I just purchased a 15.5 lb. boneless pork butt from Costco and need advise as how long to cook it.

    If you do low and slow--225°-250° expect 1 1/2- 2 hrs per pound.

    Cutting it in half and doing one piece this weekend and the other piece the next weekend, might be a less strenuous way to go.

    That or bump the temps ups to around 300° (turbo).

    That may take a while. At 225 (Dome) its around 2 hours per lb and at 250 you can expect about 1.5 Hrs per lb. I just set mine up for 250 dome and expect 2 hrs per lb and that gives me time for the FTC (Foil,Towel, and Cooler).

    There are two butts in that package.  

    Pork shoulder can be cooked in varying ways to great results.    Setup for an indirect cook.  Egg temp somewhere between 225-375º.  Add some salt to the pork and cook until tender (normally 195-205º).  Anything after that is personal preference.

    Approximate cooking times for pork butt/shoulder:

    225º:  2 hours a pound

    250º: 1.5 hours a pound

    275º:  1 hour per pound

    350º:  30-45 mins per pound

    There is a good amount of variability between individual pieces so take all times as rough (plan to be done a couple of hours before eating time). Times assume a full sized butt - 7-10 pounds. Temps are dome.
