From the salsas, bacon guac, both tamales, to the symphonic finale of rojo mole...I think I've got some Holiday staples.
Watching Complete Knife Skills with Brendan McDermott now, switching out to paring often, cutting small stuff at the end of the board. Coring a jalap with the spine of the paring. Some good stuff in here too.BrandonQuad Cities
