Help........leave the temp?

Looking for some advice.....

You start your BGE and bring it up to temp ex.250.  You add the food and the temp drops due to opening up the dome and putting in the cold meat.  The temp doesn't rise back up to 250 due to the meat being cold and absorbing the heat.  So the question is do you

a) leave the temp the same even if under 250 and let the temp climb back up as the food gets hot?

 or

b) adjust the controls and let the temp raise back up to 250?

    Once you start adjusting the vents to bring up it complicates matters.  You should allow the egg to get to temp then stabilize at desired temp for 30-60mins before adding protein.  That will allow for minimal drop from lid/protein.

    I would try and allow it to come back up on its own.

    You start your BGE and bring the temp to ex 250º.  You then need to wait until the ceramics have heated through (takes time) and a steady state has been reached.  If you start cooking as soon as the air temp hits that target, you will be chasing temps.  If you have a steady state before adding the meat, the temp drop will be temporary and you do not adjust the vents.

    ^^^^  -the key is to make sure the ceramics and all the hardware are in equilibrium before loading the protein.  If there, the BGE will recover over time (depends on the total quantity of protein loaded).  If you get chasing the temp you can be wrestling with it all day long.
    If you are running manual and are around all day you can open the lower vent a small amount to speed up the temperature return but you then need to knock the vent back to where it was our you will be forever aiming at a moving target.  FWIW-
