Whole Hog Methods
The "Pig on a cross" thread got me pondering all the ways one might cook a whole hog. I've had them roasted whole on a wood fired cooker a number of times. One of the best ones I had was years ago at a party. They got a 150# hog, seasoned it heavily inside and out, packed the inside with sauerkraut, mummified it in aluminum foil, and cooked it over a wood coals between two pieces of chain link fence so they could flip it occasionally. It seems to me it cooked for about 20 hours. When it was done we cut open the foil, pulled out the bones, and put on the feed bag. It wasn't smoky at all, but it was delicious.
