The low and slow lump fill
This is how much lump you need for that low and slow cook. My first few brisket cooks I had 1/2 the lump as I do in this cook.

You can run 30hrs on that much lump.

I been filling my Large egg like that but then the lump under the fire grate doesn’t burn and it makes it hard to get the ash out.

I usually have plenty left over. I did learn you need to give it plenty of time to come to temp and make sure it is stable before going to bed for the overnight cook.Northern New Jersey

I usually light mine in three spots for low and slow. About 12 o clock, and then 4 and 8. However, throughout the cook, the center coals light and burn down to ash, with the outside coals never light. If I ever do an extended cook, I typically have to stir the coals once or twice. Is this normal? Or is there a way to get all the coals to burn more evenly?
