Homemade ravioli. Pretty darn good

ravioli filled with hot Italian sausage, Asiago and Parmesan. Sauce is heavy cream Asiago, parmesan and leftover sausage with basil, oregano, and rosemary. First shot at homemade ravioli.  Good stuff.

@Mattman3969 the pasta roller is a kitchenaide attachment.  The press is this one.

Roll it out.  Lay on the silver one.  Dimple with the white thing, fill, cover , rolling pin.  Flip over and cut with pastry roller. Labor of love, but worth it.

I’ve got a buddy that is heavy into pasta making. I’ve helped a few times and labor of love describes it well.   He uses a hand crank roller.

This is a father/daughter dish for me. We started when my daughter was maybe 11 years old. She’s 24 now. We always make the dough by hand, then roll out the sheets with an Atlas hand crank roller. We cut and seal each one by hand. It is indeed a labor of love and a special time I get to spend with her.
    Your dish looks wonderful.

@g8golfer took me a long time to pull the trigger. Glad I did. Same with the Vitamix.
