Homemade ravioli. Pretty darn good

ravioli filled with hot Italian sausage, Asiago and Parmesan. Sauce is heavy cream Asiago, parmesan and leftover sausage with basil, oregano, and rosemary. First shot at homemade ravioli. Good stuff.

Roll it out. Lay on the silver one. Dimple with the white thing, fill, cover , rolling pin. Flip over and cut with pastry roller. Labor of love, but worth it. -

This is a father/daughter dish for me. We started when my daughter was maybe 11 years old. She’s 24 now. We always make the dough by hand, then roll out the sheets with an Atlas hand crank roller. We cut and seal each one by hand. It is indeed a labor of love and a special time I get to spend with her.
