I make a paste out of garlic, olive oil, fresh rosemary, thyme, and sage and rubbit down. I cook indirect at 275 or so with some pecan smoke until it hits 120 IT, make it direct and crank it up to 500 or so to sear and finish. I think I pull it off around 130 IT, and rest it.
