Pulled lamb

I can't always find these lamb shoulder roasts so I buy them when I can. I studded it with a head of garlic and rubbed it with S&P. Placed it on a bed of potato wedges and cooked it just like a pork shoulder. About 3hrs at 250 until it stalled at 170 IT. I foiled until it reached 205 then pulled it apart. And then we ate it.
