Our late Christmas dinner...

Morning All:

We did Christmas dinner with our son, D-I-L & 3 grandsons last night as they went the D-I-L's parents on Christmas day, but not really a problem as it gave the 7 pound ribeye roast a few more days to dry age...ended up a total of 19 days in the fridge & loss just over half pound in weight...


Added butter/herb paste then on the Egg at about 250 dome temp...on rack over CI pan with some beef consume' which ended up making some very good au jus/light gravy...


Took about 3 hours to reach 115 internal temp, pulled to rest & over the next 30 minutes IT went up to about 130...I didn't put back on the Egg, sliced & ready to devour...


Roasted a few fresh beets on the small Egg also...


Everyone was very satisfied!
