Pork Loin Cuban Sandwich

Cooked the Pork Loin from Costco with some Mole rub from Dizzy Pig, didn't realize how much leftovers we had so had to do something with it, sorry no pics of the eggin'. Sliced up the pork loin really thin, added some salami (had no ham), swiss cheese, pickles, mayo, and mustard. Threw it on the Blackstone with some butter and a brick wrapped in foil for the press. Turned out pretty good considering the pork loin cooked on the egg was meh at best.
