Merry Christmas to all! We smoked a 12 pound four bone prime standing rib roast for Christmas. After I cut the bones off and sliced a few pieces, Ynette said "Weren't you going to take pictures?" Oops. I'm sorry, but it looked so good and smelled so good, I totally zoned out. How the heck can you think of delaying the pleasure of a mouth watering hunk o' beef when that aroma comes wafting up from the carving board?
Maybe I will take of picture of one of the bones after I finish gnawing on it today.

I get it about the pics. The bones - You can put them back on the BGE for a couple of hours (around 250-260*F on the dome) til they pass the tooth-pick test. Then enjoy beef back ribs. You will be rewarded. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I forgot pics as well. I smoked two briskets overnight, let them rest 20 minutes, then in to FTC. Emptied egg, saving burning lump, poured in fresh lump and some cherry, put burning lump back on top and cooked a turkey. When Turkey was done, I carved turkey (after a rest) and sliced brisket on demand. I have zero pics of food. Best brisket to date. The turkey was one we raised and butchered ourselves.

It happens and usually when it does it's a sign that:
a. you did a good job with the cook
b. you were really hungry
c. someone else was really hungry and would have harmed you if you delayed their eating
d. a combination of the above
Nice you were asked if you were going to take pics. I serve my wife first and then she says I'm off to "play with my food and let it get cold".
