Lollipop Wings

Long time lurker, first time poster. Would lollipop wings benefit from sitting uncovered in the fridge overnight to crisp the skin? Wondering since most of the skin will be covered. Thanks in advance

I'm of no help with your question (lollipop wings are quite labor intensive) but if no one else comes along with inputs, dry some wings overnight before going the lollipop route and some others without the drying, Then cook 'em and see how they compare. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
@joeystl I did some lollipop drumsticks last week (the post is probably on the first few pages).
I left them out overnight. Even cooking indirect I thought it helped to at least change the texture of the skin so you didn’t get that bite of rubbery leg skin that can happen.

Welcome. Not sure what you mean by lollipop wings, usually for drums as @Killit_and_Grillit posted. Either way, dry skin ends up better. I've got 5# of wings drying in the fridge as we post.Sandy Springs & Dawsonville Ga
