Bday SRF Skirt Steak

The wife surprised me with a black grade snake river skirt steak. Birthday is tomorrow! I’m thinking hot and fast for med-rare.

Any ideas for seasoning? Just S&P? Can I put oil on the steak to bind the seasoning or will the oil burn if I cook at 700+?

Since its SRF I don’t know normally I’d do something like above for flank or skirt

Depends what you plan to do. I love Dizzy Fajitaish w/ fresh lime and EEVO
 Marinate for as many hours as you can.

Marinated half in brown sugar, rosemary leaves, worcestershire sauce, and lime juice. Other half got olive oil, salt, and pepper. Large egg at 700 degrees. Cooked them 2min each side and ended up with med-rare on thicker pieces and medium on smaller. Couldn’t believe how good they both were. Wife, her sister, and brother in law said was one of the best steaks they’ve ever had. The flavor was just unreal. Gonna do this again for sure!
