Impromptu Turbo Butt

Was out doing errands this morning and decided I wanted some smoked meat tonight. Picked up a small 5 lb butt from the butcher on the way home. Going turbo in hopes of a dinner time finish. Went on just before 1. Sitting at 147, 3 hrs in. 

Never done a turbo cook before.

Here. We. Go.

    When you say turbo, at what temp are you cookin'?
  • 345 seems to be where the XL wants to hang out this afternoon. Going to wrap around 160 with a little beer or apple juice.

    Thanks.. would like to hear how it turns out.  My usual low'n slow on the lg is  about 275.
  • Here’s the finish. Not my best work, but it more than satisfied my hankering. I doubt I’ll ever go back to the old 250-275, low and slow cook. This was tender, moist, pulled easy, had good bark, and just the right amount of smoke. Not sure what else I could ask for, except to maybe use a different rub next time. Other than that, this was a total success. Paired with Pat Martin’s White sauce that I mixed up quickly.

    Great result right there.  Nailed the audible.  
    Regarding not going back to low&slow-you need to consider the loss of SWMBO eggscape time with adult supervisory beverages when you transition to the turbo world.  That factor alone carries significant weight.  FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
