Chili Garlic Shrimp
Made Green Lightning shrimp tonight and it was good but everyone agreed Chili Garlic Shrimp is better. Here is how I make it.
1lb large shrimp
Fresh lime juice from 1 small lime
1t Sriracha
1T light brown sugar
2T minced garlic, I use the bottled kind
1 Serrano chili diced. I leave the seeds and membrane in.
2T ketchup
1/4 cup olive oil
1/4 cup toasted sesame oil
1/4 cup soy sauce.
Get the egg up to 450. While the egg is heating combine all ingredients and marinate the shrimp for 10 min then place on skewers.
Grill direct for 2 to 3 min per side. I will sometime keep a little marinade to the side and brush on the shrimp while cooking. In all honesty I really can't tell the difference.

I love large shrimp on the BGE and have my own recipe for the sauce/marinade before going on the egg! But with the high cost of those big boys it is important to pay attention (and maybe even avoid the extra adult beverage) before putting them on the grate. You can go from expensive seafood to curled leather in a flash!
